Combine chicken mince, spring onion, garlic, ginger and sesame in a bowl. Heat a fry pan or wok. Stir fry the chicken mixture until golden brown and cooked through. Remove from the heat and stir through chilli and soy sauce to taste. Stir though coriander leaves.
To serve, spoon the chicken to fill the lettuce leaves and top with avocado if using. Sprinkle with a little extra chilli if desired.
For loss of taste and anosmia: Use crispy iceberg lettuce for texture. Add toasted peanuts on top. Add chopped water chestnuts for extra crunch.
