Serve your Lemon Herb Grilled Chicken with Berry Salsa alongside your favourite side dishes. The combination of citrus, herbs, and sweet berries will add a burst of flavour that helps counterbalance any perceived saltiness.
¼ cup red onion, finely chopped
¼ cup fresh cilantro, chopped
1 tablespoon balsamic vinegar
In a bowl, combine lemon zest, lemon juice, olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper.
Place the chicken breasts in a ziplock bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 30 minutes.
Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill for 6-8 minutes per side or until the internal temperature reaches 74°C (165°F).
In a bowl, combine diced berries, chopped red onion, fresh cilantro, balsamic vinegar, honey, salt, and pepper. Mix well.
Once the chicken is cooked through, remove it from the grill and let it rest for a few minutes.Top each grilled chicken breast with a generous scoop of the berry salsa.
