Ingredients

6 eggs
250g smooth ricotta cheese
1 tbsp red miso paste
¼ diced bacon
¼ cup frozen diced onion, optional
¼ cup chopped or halved green olives
¼ cup sun-dried tomato strips
¼ cup roasted pepper strips
¼ cup marinated artichoke pieces
¼ cup marinated zucchini strips
⅓ cup Tomberry tomatoes
1 cup zucchini noodles/zoodles
¼ cup grated parmesan cheese
Salt & pepper to taste
⅓ cup self-raising flour

Directions

Pre-heat oven to 180ºC. Lightly grease a 2 litre ovenproof dish. Break the eggs into a large bowl. Add the smooth ricotta and miso paste and whisk a little. Add the remaining ingredients and stir to combine. Add the flour and again, stir to combine.
Pour the mixture into a the ovenproof dish and place in the oven for 40 minutes or until set. Slice and serve.

For loss of flavour: Enhance the eating experience by incorporating a touch of chilli or wasabi paste for a lively sensation in the mouth. When serving, a sprinkle of fresh basil or mint on top provides a refreshing cooling effect.
