This baked oatmeal can be a meal in itself. Even a small portion will sustain you, so it is brilliant if you have loss of appetite or loss of weight.
To the same bowl, add the rolled oats, baking powder and salt and stir to combine. Gently stir in the blueberries.
Pour mixture into the greased baking dish and place in the oven for for 35 minutes. Check the oatmeal at the 30 minute mark for good measure. It will be cooked once it comes away from the edge of the dish slightly and is golden in colour. Serve with a dollop of coconut cream and milk.
The cooked oatmeal will freeze well. Simply cut into portions once cooled and wrap well. Place portions in an airtight container in the freezer until required. Reheat in the microwave as needed.
