Chicken & Pink Grapefruit Salad

1⁄2 barbecue chicken
½ cup quinoa
½ pink grapefruit, peeled & chopped
1 avocado, peeled & sliced
Baby spinach leaves
Fresh mint, chopped
Lemon infused olive oil
Fig glaze
Cook the quinoa according to packet instructions. Meanwhile, cook the chicken breast in a pan and slice or pull the meat off the barbecue chicken.
To make the dressing, simple mix some lemon infused olive oil with the fig glaze. The amount will be dictated by your taste and preference.
In a bowl, gently stir all the ingredients together and coat with the dressing. Serve on a plate and garnish with extra herbs.
