Cauliflower, grapefruit and baby spinach all have a high water content. This is great for hot Summer days or on days when you need the extra hydration and want something more than water alone. Add cooked chicken to really bump up the protein and make a well rounded dish.
1 cup cauliflower rice, cooked & drained
½ small pink grapefruit, skin removed and chopped
1 avocado, peeled & chopped
Baby spinach leaves
Fresh mint, chopped
Lemon-infused olive oil
Fig glaze
Add all the salad ingredients to a large bowl and gently toss to combine.
To make the dressing, simply mix some lemon infused olive oil with the fig glaze. The amount will be dictated by your taste buds and preference. Keep testing until the balance is right for you.
Pour the dressing onto the salad and gently toss to coat. Serve as a small main or a side.
