🧐 You've heard of coleslaw, right? Now there's Soft Slaw. It's our version of coleslaw for people who have a sore mouth and difficulty chewing as a result of their cancer treatment. These are two common side-effects of cancer treatment and chemo that would normally stop you from enjoying food.⁠
⁠🤨 Well, we're having none of that! Enter Soft Slaw!...⁠

Soft, silky smooth and easy on the mouth, this soft slaw won't disappoint.

Ingredients

A mix of soft leaf lettuces*, shredded⁠
2 small carrots, finely grated

Dressing

1 cup raw cashew nuts ⁠
1 tsp mustard⁠
1 tsp apple cider vinegar ⁠
Maple syrup to taste⁠

Directions

Soak the cashews in hot water for 1 hour. Drain and reserve the soaking water. Meanwhile place the shredded lettuce and grated carrot into a medium bowl.⁠
Whizz all the dressing ingredients in a small blender, adding as much of the reserved water as required to reach the desired consistency - you should be able to pour it. Pour the dressing over the lettuce and gently toss to coat.
