🧐 You've heard of coleslaw, right? Now there's Soft Slaw. It's our version of coleslaw for people who have a sore mouth and difficulty chewing as a result of their cancer treatment. These are two common side-effects of cancer treatment and chemo that would normally stop you from enjoying food.

The Cancer Cookery School
Soft, silky smooth and easy on the mouth, this soft slaw won't disappoint.
A mix of soft leaf lettuces*, shredded
2 small carrots, finely grated
- 1 cup raw cashew nuts
- 1 tsp mustard
- 1 tsp apple cider vinegar
- Maple syrup to taste
- Soak the cashews in hot water for 1 hour. Drain and reserve the soaking water. Meanwhile place the shredded lettuce and grated carrot into a medium bowl.
- Whizz all the dressing ingredients in a small blender, adding as much of the reserved water as required to reach the desired consistency - you should be able to pour it. Pour the dressing over the lettuce and gently toss to coat.
*Red or Green Oak-leaf, Gem, and Purple or Green Butter lettuce.
For loss of taste: Add wasabi to the dressing (if your mouth can take it). Or use hot English mustard.
