This recipe is non-dairy and gentle on a lactose sensitive tummy. If you have a dry mouth or throat, avoid rolling in the extra coconut.
All all ingredients to a food processor and blend until combined and a sticky ball forms. Roll a tablespoon of mixture at a time to form balls. Roll in extra coconut if desired. Keep refrigerated in an airtight container.
For dry mouth or throat and difficulty swallowing: Avoid rolling the balls in the extra coconut.
