During cancer treatment and chemotherapy, a diminished appetite is a prevalent side effect. Large meals often lack appeal when your body needs nourishment the most. This is where nourishing snacks come into the picture. Sometimes, it's not the quantity of the meal that matters, but rather the quality that counts.
Butter beans, also known as lima beans, offer numerous health benefits. They are rich in dietary fibre, which aids in digestion and promotes a healthy gut. These legumes are an excellent source of plant-based protein, making them beneficial for vegetarians and vegans.
Butter beans are low in fat and contain no cholesterol, contributing to heart health. They provide essential vitamins and minerals, including iron, magnesium, and folate, which support energy production, bone health, and red blood cell formation.
Additionally, butter beans possess antioxidants that help reduce inflammation and protect against chronic diseases, making them a valuable addition to a balanced diet.
400g can butter beans, drained & rinsed
400g can chickpeas, drained & rinsed
¼ cup tahini
½ teaspoon ground cumin
For difficulty chewing & swallowing and dry mouth & throat: Drizzle on and stir through olive oil. The oiliness will help moisturise the mouth and assist with swallowing. Serve on soft bread.
