Chia pudding is one of those great foods that can be enjoyed when you are experiencing almost any side-effect. Chia is full of good fibre which may help if you have constipation. You can use coconut milk or add coconut cream if you have lost weight. Stir through yoghurt before eating if have a dry mouth or difficulty swallowing and need more moisture in your food. Chia seeds are also a good source of protein, which will help your muscles during when you are not able to eat very much.
Place all ingredients, except the toppings into a jar with a lid or a bowl. Shake the jar until all ingredients are combined or whisk together if using a bowl. Place in the fridge for 30 minutes. Stir with a fork and return to the fridge for at least 4 hours or overnight. Serve with any toppings you like. Stir through Greek yoghurt or coconut yoghurt if you have a dry mouth or throat and need more moisture.
For Loss of Weight: Use full fat coconut milk. Stir through coconut yoghurt before serving.
For Dry Mouth & throat or Difficulty Swallowing: Stir through Greek yoghurt or coconut yoghurt before serving for more moisture.
