Adaptations:
Metallic taste: Swap red meat for white meat - chicken, turkey, pork. Or go plant-based using lentils and any type of beans.
Dry mouth & throat: Use chicken mince for moisture. Cover the cooking tray with foil to keep the moisture in. Pour a little stock in the pan with the burgers and cover with foil. Adds loads of anything hydrating on top when plated to give plenty of moisture in the mouth. Drizzle with olive oil to moisten the mouth. Dollop on sour cream or yoghurt to add moisture - the oiliness also makes them easier to chew and swallow. One of Jamie's tips is to make meatball sized burgers and serve them with tomato based sauce and spaghetti - that's a great tip Jamie!
Constipation: Add fibre blend. Leave out the cheese. Ask your Dietitian which fibre blend is suited to your needs.
Nausea: Add some ginger into the mixture. Cook covered in foil with the fan-assist off to lessen the cooking smells.
Difficulty swallowing: Blend the add-in ingredients to a smooth paste. Then break up the burgers before eating. You may want to add something on them for moisture. You could drizzle them with olive oil or dollop on plain yoghurt or sour cream to help them in glide down easier.
Sore mouth: Blend ingredients to a paste. You can even blend the meat a little for a more consistent texture. Cover with foil in the oven to avoid crispness on the outside. Swap in soft vegetables or soft butter lettuce leaves instead of the salsa.
Dulled taste & loss of flavour: Ramp up the umami! Add in bacon, red miso paste, sun-dried tomatoes, soy sauce... This will amplify any taste you have. You may even get a bit of extra flavour in the mouth. Your dull taste buds will also benefit from a tangy salsa to go with your burger. Think ingredients like berries, pineapple, mint etc. A bit of vinegar doesn't go astray either.
Chemo fatigue: Get ahead by making the patties in to whatever size you like and pop them in the freezer for the days you don't feel like cooking or simply don't have the energy.
