My husband has a habit of opening the fridge and claiming there's nothing for dinner, but I suspect it's just a clever tactic to lure me into the kitchen. However, after whipping up this salad, I realised I had crafted a dish teeming with diverse textures - an ideal remedy for taste buds weary from chemotherapy.
The baby cucumbers contribute a crisp, snappy crunch, complemented by the bagel seasoning. Avocado and sunflower seeds add their own creamy variations. Beetroot offers a gentle softness, while broccoli provides a more substantial bite. Sun-dried tomatoes elevate the flavour with their umami richness, and the pomegranate molasses brings a tart, tangy kick with hints of caramelised sweetness.
250g baby cucumbers, sliced
250g cooked whole beetroot, diced
½ small head of broccoli, finely chopped
½ avocado, peeled & diced
½ cup swiss brown mushrooms, chopped
¼ cup sun-dried tomato strips
4 tbsp sunflower seeds
Olive oil
Pomegranate molasses
Mingle Everything Bagel seasoning
Add all the ingredients to a large bowl and gently toss to combine. Drizzle with olive oil and pomegranate molasses and gently stir to coat. Sprinkle with a little Everything Bagel seasoning and you are done.
