A very refreshing smoothie. This smoothie is the beans on a hot day. You can make it with fresh or frozen pineapple. Substitute coconut yoghurt for the Greek yoghurt to make it vegan and dairy free. If your taste buds have been dulled by chemo or Covid, then the mint will have your mouth experience extra coolness.
¼ fresh pineapple or 1 cup frozen pineapple pieces
½ small banana
¼ cup plain Greek yoghurt or coconut yoghurt
½ cup coconut milk
½ lime, juiced
A few fresh mint leaves
Place all the ingredients into a blender and blend until smooth. Pour into a glass and enjoy.
