Banana Oat Energy Bites

1 medium ripe banana
1 cup rolled oats
½ cup pepitas or sunflower seeds
½ cup peanut butter or any nut butter
¼ cup cacao nibs
Mash the banana in a medium bowl. Add remaining ingredients to the banana and mix well to combine.
Take a small amount of mixture (about 2 tablespoons) and roll in the palms of your hands to form a ball. Keep the balls in an airtight container in the fridge for up to 3 days. They can also be frozen for up to 3 months.
For sore mouth and difficulty chewing: Place pepitas and oats into a blender and blitz until smooth. Leave out the cacao nibs.
For difficulty swallowing: As above or pop a couple of balls into a blender with 200ml of milk of your choice to make a drink.
If food is tasting too salty: Use a low to no salt peanut or nut butter.
