Christmas Spice Panna Cotta is a fantastic alternative to heavy and fruity Christmas cake
and plum pudding. Being a cold dessert, it may suit the side effects of nausea and
metallic taste.
150 ml double cream
150 ml milk
¼ teaspoon vanilla extract
¼ teaspoon Christmas Spice mix (see note)
4 gelatine leaves
Soften gelatine leaves according to packet instructions. Place remaining ingredients into a small saucepan and heat gently until steam begins to rise. Don’t let it boil :)
Add the softened gelatine leaves to the warmed cream mixture and stir gently until fully dissolved. Remove from the heat and pour into moulds or glasses. Place in the fridge for at least two hours or overnight to set. Enjoy as is or top with fruit or chia jam.
Christmas Spice mix recipes can be found on the internet. They are generally a
mixture of cinnamon, coriander, ginger, clove, and nutmeg. The exact qualities will vary
according to individual taste. I used Gewertzhaus Christmas Cake & Pudding Spice in this
recipe.
Vegetarian & Vegan: Swap dairy ingredients for non-dairy alternatives. Substitute gelatine for a vegan alternative and follow packet instructions for use.
